EZ DOH Blog & Recipes: Peanut Butter Sweet Rolls !

Ingredients

Dough

  • 1 Tbsp/Packet Red Star Platinum Yeast
  • ¾ Cup milk , warmed (not hot)
  • 1/3 Cup sugar
  • 3 Tbsp. softened butter
  • ½ tsp. salt
  • 1 egg
  • 2 ½ + Cups unbleached, all-purpose flour

Filling

  • 1/3 Cup peanut butter
  • ½ Cup brown sugar
  • If desired: mini chocolate chips

Frosting

  • 1 Cup powdered sugar
  • 2 Tbsp. peanut butter
  • 2 Tbsp. milk

Instructions

  1. Place warm milk and yeast in EZ DOH bucket and stir to dissolve yeast.
  2. Let rest 1 minute.
  3. Add one cup of flour, then additional dough ingredients.
  4. EZ DOH-it for 2-3 minutes, or until dough is smooth and soft and all ingredients are incorporated.
  5. Remove dough from bucket, spray bucket with cooking spray, “smooth” dough and replace in bucket.
  6. Cover and let rise until doubled.
  7. Stir together filling ingredients.
  8. Remove dough from the bucket and roll out into a rectangle, about 12x9”.
  9. Spread with peanut butter filling ingredients.
  10. If desired, sprinkle with chocolate chips or chopped peanuts.
  11. Roll up tightly from the long side.
  12. Slice into 9 equal-sized rolls and place in a 9” greased round pan.
  13. Cover and let rise. (I like to cover with plastic wrap and place in the fridge. They will rise overnight and you can bake them in the morning).
  14. When risen, bake at 375 for 20-25 minutes, or until golden.
  15. Mix the frosting ingredients thoroughly, adding powdered sugar if too thin.
  16. Frost rolls while warm.
