Ingredients
- 200 g desiccated coconut
- 200 g condensed milk
- ½ tsp vanilla extract
- 300 g milk chocolate
Method
- Stir together the desiccated coconut with the condensed milk and the drop of vanilla extract. Pour into the base of a square silicon baking mold or clingfilm lined baking tin. Chill for several hours in the fridge, or an hour in the freezer usually works.
- Cut small bars out of the set coconut block that are about 3cm across and 6-7cm long. Use your finger and thumb to round off the corners to imitate the real chocolate bars. Line them up on a wire rack over a plastic tray or clean work surface.
- Melt the milk chocolate until it's completely smooth. Pour it over the lined up bars in a continuous stream so that ample chocolate covers each coconut bar and it dribbles down the sides. Level it with a skewer so that it's perfectly clean.
- Use the same skewer (or the back of a knife) to create 3 parallel lines on each bar, moving swiftly between them to create the iconic markings on top of the bars.
Yummy !
À refaire
Ingredients for the mousse
- 3 free-range eggs
- 100g caster sugar
- 300g dark chocolate, broken into small pieces
- 125g unsalted butter
- 500ml whipping cream
- Cocoa powder, to finish (optional)
Ingredients for the Baileys cream:
- 200g mascarpone cheese
- 75ml Baileys
- 30g caster sugar
Method
- Put the eggs and sugar in the bowl of an electric mixer and whisk until light and airy - the longer you whisk, the better, so give it at least eight to 10 minutes. (You could do it by hand, but that would be a big effort.)
- While the eggs are whisking, put the chocolate and butter in a heatproof bowl and place over a pan of barely simmering water. Stir with a wooden spoon until they melt completely.
- With the mixer running on medium speed, add the chocolate mix to the egg mix in a steady stream - it is important to combine the two gradually but continuously, with the chocolate going into the eggs and not the other way around.
- Whisk the cream until it firms up just a little - it needs to reach a loose ribbon stage (when you lift the whisk, the cream dribbling off should create clear lines in the surface before disappearing). Gently fold the semi-whipped cream into the egg and chocolate mix, and pour into a serving bowl. Chill for at least an hour to set.
- Make the Baileys cream in advance, or just before serving. Put all the ingredients in a bowl and whisk. The cheese will go loose and runny, but it should firm up again. Stop when it reaches a very soft peak consistency.
- Serve the mousse directly from the bowl with a huge dollop of Baileys cream on top. Dust with cocoa powder, if you like.

Ingredients
- 2 litres goat's milk (You can substitute cow’s milk, or use a combination of cow and goat milk.)
- 2½ cups dark brown sugar or shredded piloncillo, lightly packed
- 3 tsp vanilla extract
- ½ tsp baking soda
Instructions
- Place a large pot (I use my new copper one!) over medium heat. Pour milk, vanilla, sugar and baking soda, give it a good stir and let it come to a simmer. Keep it at a steady medium simmer for about one hour and a half, stirring occasionally, every 15 to 20 minutes or so, with a wooden spatula or spoon. The mix will gradually thicken and darken.
- After about an hour and a half, the liquid will have thickened and reduced and the simmer will become stronger. Reduce the heat to medium low, to keep it at that constant medium simmer. You want active bubbling, but not over the top angry bubbles. Stir a bit more frequently, as you don’t want the bottom to develop a thicker layer.
- You know the cajeta is ready when: It achieves a caramel brown color; it is thick as liquid caramel or syrup, much like a chocolate syrup consistency; it envelops the back of the spoon; when you gently stir across the pot with your wooden spoon, a slightly delayed trail behind the spoon appears, revealing the bottom of the pot if only for a few seconds; as you slowly lift up the wooden spoon or spatula, cajeta takes it’s time to drop and lastly, the sides of the pot show how the cajeta has cooked down and if you run your spoon across that side, you get a fudgy (and delicious) residue.
- Turn off the heat and let cool (it will thicken considerably as it cools).
- Place in a glass jar, cover tightly with a lid. It will keep in refrigerator for up to 6 months.

Vietnamese coconut crème caramel (kem flan) recipe : SBS Food

Double chocolate bacon cupcakes
Makes about 3 dozen mini cupcakes
Candied bacon
- 5 strips of applewood smoked bacon
- About a cup of packed brown sugar
- Preheat the oven to 350ºF.
- Line a baking sheet with foil and place a wire rack across the top.
- Spread the brown sugar out on a plate and press each strip of bacon into the sugar to thoroughly coat each side.
- Place each sugared strip of bacon on the wire rack, making sure they aren’t touching one another.
- Bake for 20-30 minutes, until the bacon is crispy, but not burned (My oven is wonky, so it took a few minutes longer for me).
- Remove from oven and let cool. Chop into tiny pieces.
Chocolate cupcakes
- Scant 3/8 cup milk
- Scant ½ tablespoon white distilled vinegar
- 6 tablespoons unsweetened cocoa powder
- ¾ cups all-purpose flour
- ¾ cups sugar
- ¾ teaspoons baking soda
- ¼ teaspoon plus 1 dash baking powder
- ¼ teaspoon plus 1 dash teaspoon salt
- 1 large egg

- Preheat the oven to 350ºF. Prepare a mini muffin tin by spraying it with Pam.
- Sift together the cocoa powder, flour, sugar, baking soda, baking powder, and salt in the bowl of an electric mixer (or a medium bowl if working by hand).
- Add the egg, water, milk, oil, and vanilla, and stir until just smooth.
- Fill the prepared mini muffin tin 2/3 full.
- Bake about 8-12 minutes, until a toothpick inserted in the center comes out without any batter and perhaps just a few crumbs.
- Let cool on a wire rack.
- Pour a teaspoon of ganache (recipe below) over each cupcake and sprinkle with a teaspoon of candied bacon bits. Serve with a glass of milk.
Chocolate ganache
- ½ cup heavy whipping cream
- 1 cup semisweet chocolate chips*
- In a medium saucepan over low heat, bring the cream to boil.
- Pour the cream over the chocolate chips and let sit for 2-3 minutes.
- Stir until thoroughly combined (at first, it’ll look too milky like it won’t combine, but it’ll eventually turn into velvety ganache).
*I made a batch with semisweet chocolate chips and with bittersweet chocolate chips and found the latter too overpowering for my taste.
Ingredients
- 2 cups (260 grams) all purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ¾ cup (170 grams) unsalted butter, at room temperature
- 1 cup (205 grams) firmly packed light brown sugar
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
- 3-4 tablespoons milk
- 1 cup (125 grams) dark raisins
Instructions
- Preheat oven to 375 degrees F (190 degrees C). Butter or line two baking sheets with parchment paper.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- In the bowl of your electric mixer (or with a hand mixer), beat the butter until smooth and creamy. Add the sugar and beat until soft and fluffy (about 2 minutes). Beat in egg and vanilla extract. Scrape down the sides of the bowl as needed. Add the flour mixture to the batter and beat until incorporated. Add enough milk to make a soft batter. Then add the raisins and beat until combined.
- For each cookie, drop about one tablespoon of batter onto the prepared baking sheet, spacing the cookies about 2 inches (5 cm) apart. Bake the cookies for about 12 - 14 minutes, or until the tops of the cookies are still soft with just a touch of color, yet the edges are golden brown. Remove from oven and transfer the cookies to a wire rack to cool.
- Makes about 26 cookies.
