Ingrédients
- 6 cuisses de canard non gras
- 1 bocal de graisse de canard (400g)
- sel
- poivre du moulin
- 50 cl de bouillon de volaille
- un peu de vin blanc (15cl) + un parfum = l'alcool de votre choix, ici une cuiller à soupe de pineau des Charentes.
- aromates au goût (1 branche d'étoile de badiane, 1/2 cuiller à café de gingembre
en poudre, 1 feuille de laurier, 4 clous de girofle)
Instructions
- Débarassez les cuisses de leur peau, en incisant sous la peau et en tirant dessus.
- Faites-les cuire en cocotte, 3 heures de feu moyen à doux, avec le bouillon de volaille, le vin blanc, l'alcool de votre choix, les aromates pour parfumer.
- Au delà de ce temps lorsque le liquide s'est évaporé, ajoutez la graisse et laissez cuire encore 1.30 heure, les fibres doivent se séparer, aidez-les avec une spatule ou fourchette en bois.
- Laissez-les refroidir à température ambiante.
- Finissez d'écraser la préparation pour obtenir une pâte homogène et remplissez votre terrine en coulant un peu de graisse seule sur le dessus.
- Attendre 24 heures avant de déguster avec du pain au levain, aux céréales, et des cornichons !
Ingrédients
- 2 lb (1 kg) de flanc de porc ( poitrine de porc ),désossé
- 1 lb (500 g) d'épaule de porc (échine de porc ), désossée
- 1 lb (500 g) de soc de porc (palette de porc ), désossé
- 300 g de gras de dos (gras de bardière)
- 1/2 lb (250 g) de panne de porc
- 400 ml d'eau
- 45 g de gros sel
- Poivre au goût
Instructions
- Couper, le flanc, l'épaule et le soc de porc en morceaux de la grosseur d'une noix.
- Réserver.
- Couper le gras de dos en petits dés et la panne de porc en petits lardons.
- Porter l'eau à ébullition dans un grand chaudron.
- À ébullition, ajouter la panne de porc et laisser fondre pendant 5 minutes.
- Ajouter le flanc, faire rissoler pendant 10 minutes à haute température, remuez à la spatule.
- Ajouter le soc et l'épaule et faire rissoler pendant 10 minutes en remuant.
- Ajouter le gras de dos, faites fondre jusqu'à ébullition.
- Après 1 heure, lorsque le jus et la graisse recouvrent l'ensemble, ajouter le sel et le poivre.
- Couvrir le chaudron, laissez émettre un petit bouillonnement.
- Laissez mijoter 6 heures environ, en remuant régulièrement, afin de bien effilocher la viande.

Ingredients
- 500 grams ground beef
- 18 strips of streaky bacon
- 50 grams grated Parmesan cheese
- 2 teaspoons garlic powder
- 1 egg
- 75 ml milk
- 50 grams breadcrumbs
- 2 tablespoons Italian or french herbs
- 1 tablespoon freshly ground black pepper
- 5 tablespoons your fav BBQ rub
- 5 tablespoons your fav BBQ sauce
Instructions
- With the exception of the bacon, BBQ rub and sauce, throw everything in a bowl and mix it up well until you have a smooth paste.
- Roll them into little meatballs, roll them through your BBQ rub and roll a piece of bacon around it.
- Use a toothpick to secure it into place.
- 40-45 minutes on the BBQ at 110-120 degrees (indirect heat). The more smoke the better. It will create a nice red smoke ring and amazing taste!
- Then turn them around, glaze them with your BBQ sauce. Another 40-45 minutes.
Ingrédients
- 1 kilo de pommes de terre longues à chair ferme
- 4 belles tranches de lard maigre
- 2 oignons
- 4 cuillères à soupe d’huile (ou du saindoux)
- 2 cuillères à soupe de farine
- 2 ou 3 gousses d’ail
- Thym, laurier, persil, sel et poivre
Instructions
- Dans une cocotte en fonte, faire revenir à feu moyen une belle tranche de lard par convive.
- Lorsque le lard est doré, le retirer de la cocotte et réserver.
- Ajouter de l'huile et augmenter le feu. Faire rôtir les pommes de terre entières ou coupées en deux selon la taille.
- Lorsque celles-ci sont dorées (pas noires), les retirer de la cocotte et réserver.
- Ajouter les oignons coupés en rouelles, éventuellement un peu d'huile, et faire blondir à feu moyen.
- Ajouter de la farine et faire un roux en grattant bien le fond de la cocotte.
- Remettre les pommes de terre, mouiller pour juste couvrir les légumes.
- Ajouter une branche de thym, une feuille de laurier, deux ou trois gousses d'ail, sel et poivre.
- Laisser cuire à feu doux pendant 45 minutes environ, puis remettre dans la cocotte les tranches de lard.
- Juste avant de servir, parsemer votre cacasse à cul nu de persil frais et rectifier l'assaisonnement.
Ingrédients
- 1 saucisse de Morteau fumée
- 250g de farine blanche
- 2 œufs
- 5g de levure déshydratée
- 1 tasse de lait tiède
- 100g de beurre
- 1 pincée de sel
Instructions
- Préchauffer le four à 180°C.
- Faire cuire la saucisse de Morteau dans l'eau frémissante pendant 5 minutes. La laisser refroidir et la peler.
- Pendant ce temps, mettre le beurre à fondre dans la tasse de lait.
- Dans un saladier, casser les œufs et les battre.
- Y incorporer la farine, la levure et le sel.
- Mélanger le tout en incorporant la tasse de lait avec le beurre, jusqu'à obtention d'une pâte homogène.
- Dans un moule à cake beurré, verser la moitié de la pâte.
- Poser la saucisse de Morteau et la recouvrir avec le reste de la pâte.
- Enfourner pendant 35 minutes.
- Démouler et servir tiède.

Meatloaf
- ½ medium onion diced
- 1 teaspoon butter
- 2 eggs
- ¾ cup milk
- ¾ cup Italian breadcrumbs or seasoned breadcrumbs
- 2 pounds lean ground beef 80/20
- 1 tablespoon ketchup or chili sauce
- 1 teaspoon Italian seasoning
- 2 tablespoons fresh parsley chopped, or 2 teaspoons dried parsley
- 1 teaspoon Kosher salt & ½ teaspoon black pepper more to taste
Meatloaf Sauce
- ½ cup chili sauce *see note
- ½ cup ketchup
- 2 tablespoons brown sugar optional
Instructions
- Preheat the oven to 350°F. Line a rimmed baking pan with aluminum foil and spray with cooking spray.
- In a small pan, cook onions in butter over medium low heat until tender. Let them cool completely.
- In a medium bowl, combine eggs, milk, and breadcrumbs. Let the mixture sit for 5-10 minutes.
- Add the ground beef, cooked onions, ketchup or chili sauce, Italian seasoning, parsley, and salt & pepper to the bowl. Mix until just combined.
- Form a 8"x4" loaf on the prepared baking pan and bake for 40 minutes.
- While the meatloaf is cooking, combine the chili sauce and ketchup (and brown sugar if using). Spread mixture over the meatloaf and bake for an additional 10-15 minutes or until cooked through and the meatloaf reaches an internal temperature of 160°F. Broil for 1-2 minutes if desired.
- Let the meatloaf rest for 10 minutes before slicing and serving.

- rincez le et séchez le bien avec de l'essuie-tout.
- ouvrez le en portefeuille sans aller jusqu'au bout.
- assaisonnez le foie gras avec le sel fin et le poivre moulu, massez pour bien faire pénétrer.
- mettez une belle tranche de foie gras assaisonné à l'intérieur du portefeuille de canard et refermez.
- ficelez bien serré et enroule le tout dans un torchon propre.
- placez le tout dans le bas du frigo pendant 3 semaines avant de déguster.
Ingredients
- 2000 g Beef—silverside or toprump
- 5 Tbsp Brown (malt) or cider vinegar
- 2.5 Tbsp Coarse salt (2% of the meat weight)
- 2 tsp Ground black pepper
- 2 Tbsp Coriander seed
- 1½ Tbsp Brown sugar (optional)
Instructions
- Toast the coriander seeds in a dry pan, then grind down in a pestle and mortar or spice grinder. It should be mostly powder, with a few pieces of seed shells left in.
- Using a sharp knife, following the grain of the meat, cut into 1 inch (2.5cm) thick lengths and place in a non-metallic container.
- Combine all the spices and sprinkle into the meat. Sprinkle the vinegar on and rub everything in thoroughly whilst turning the meat with your hands.
- Cover the container and let your biltong cure for 24 hours in the fridge, turning and rubbing through the meat occasionally.
- Remove the meat from the container and pat dry with kitchen towels, taking care not to remove too much of the spice.
- Add a hook to the thickest end of each length. Plastic-covered paper clips make for a cheap solution. Hang in your biltong box, or in a well aired, ventilated space with a fan blowing gently to increase air flow. Do not point a fan directly at the meat (to avoid case hardening). Make sure none of the pieces are touching. Place some newspaper below the meat to catch any liquid.
- Drying times will vary with humidity, airflow and temperature. Test the readiness of your biltong every couple of days by squeezing the sides together with clean fingers. If you feel any give in the meat, it’s still ‘wet’ inside.
- Once ready, cut into thin slices with a sharp knife and enjoy some of the best meat you’ll ever eat.
Notes
- if using cheaper cuts of game or beef, add 1 tsp of bicarbonate of soda per kg to tenderize the meat.
- if you don’t have any coarse salt and need to substitute with table salt, double-check that it’s not iodized salt – iodine leaves a bitter taste in the mouth.

- 1 lbs chicken breast diced into bite-sized pieces
- 2 eggs beaten
- 1 cup panko bread crumbs
- 3 cups broccoli florets
- 3 green onions greens sliced thin
- salt

- toasted white sesame seeds optional, for topping
- crushed red pepper flakes optional, for topping

For Sauce
- 2 navel oranges zest one orange, juice both oranges
- ¼ cup honey
- ¼ cup soy sauce
- 1 tbsp freshly minced garlic
- 2 tsp fresh grated ginger or sub 1/2 tsp ground ginger
- 2 tbsp rice vinegar
- 2 tbsp cornstarch
- sriracha sauce optional: mild – 1 tsp; med – 2 tsp; hot – 3+ tsp
Instructions
- Begin preheating the oven to 425° F and spray a large rimmed baking sheet with oil.
- Season the chicken pieces with salt and fresh cracked black pepper and pour the panko out onto a wide plate. Working in batches, coat the chicken in the beaten egg then press into the panko to coat. Arrange on the prepared baking sheet as spaced out as possible.
- Spray the tops of the chicken pieces with oil. Place the chicken into the preheated oven and bake for 10 minutes. After 10 minutes, flip each piece and rotate the pan when you place it back into the oven. Bake for another 7-10 minutes until the chicken is crispy and cooked through.
- Meanwhile, on a separate baking sheet, toss the broccoli with a drizzle of oil, salt, and pepper. Roast in the oven for about 10 minutes, tossing halfway through, until crisp and charred in a few spots. OR, pan fry broccoli in a swirl of olive oil over medium heat for 2-3 minutes.
- While the chicken cooks, make the sauce. Combine the soy sauce and cornstarch in a small bowl and whisk until fully combined. Pour into a small saucepan, then add the rest of the ingredients for the sauce and mix well. Bring to a boil over high heat, then reduce heat and simmer until a thick sauce forms, about 5 minutes.
- Transfer the cooked chicken into a large mixing bowl, drizzle the sauce over the chicken and toss to coat (you may not want to use all of the sauce, so add it in steps until the chicken is coated to your liking). Add in the broccoli and toss to combine. Serve immediately topped with green onion, sesame seeds, and crushed red pepper. Great on a bed of white rice!

- 300g viande de porc haché
- 200g viande de veau haché
- 1échalote
- 50g chapelure
- 1 cuillère à soupe de Cognac
- ½ cuillère à café de noix de muscade
- ½ bouquet de persil
- Sel
- Poivre
Instructions
- Écalez 4 œufs durs (10 minutes de cuisson). Hachez une échalote. Lavez et ciselez le persil.
- Dans un saladier, mélangez les 2 viandes, 1 œuf battu en omelette, le persil, l’échalote, la chapelure, le cognac et la muscade. Salez, poivrez.
- Déroulez 1 des rouleaux de pâte feuilletée. Déposez-le dans un moule spécial "pâté en croûte" (recouvert de papier sulfurisé). Étalez la moitié du hachis de viande sur l’abaisse de pâte. Formez des creux à intervalles réguliers. Déposez dans la farce les 4 œufs durs en les enfonçant légèrement. Recouvrez avec le hachis de viande restant.
- Séparez le blanc du jaune du dernier œuf. Badigeonnez le bord de la pâte avec le jaune dilué dans un peu d’eau. Refermez le tout avec le second rouleau de pâte feuilletée en soudant les bords et dorez à l'oeuf.
- Avec la pointe d’un couteau, faites 3 cheminées (avec des petits cartons roulés) dans la pâte feuilletée pour laisser s’échapper la vapeur pendant la cuisson. Enfournez 20 min à 180 °C (th. 6) et 30 min à 150 °C (th. 5).

- ¾ tasse de sirop d’érable (de préférence foncé pour son goût robuste)
- 2 c. à thé de poudre de chili
- 2 c. à thé de paprika fumé
- 1 c. à thé de moutarde de Dijon
- 1 c. à thé de poudre d’oignon
- ½ c. à thé de poivre noir moulu
- 1 c. à soupe de sel
- ¼ c. à thé de piment de Cayenne moulu
- 6 c. à soupe de ketchup
- 1 c. à soupe de vinaigre d’érable (ou de vinaigre de cidre)
- 1 c. à soupe de miso
Viande
- 2 longes de petites côtes levées de dos de porc
Instructions
- Préchauffer le four à 160 °C (325 °F).
- Bien mélanger tous les ingrédients de la marinade.
- Badigeonner les côtes levées de la marinade.
- Mettre les côtes levées sur une plaque à pâtisserie ou dans un plat allant au four et ajouter environ 1 cm (⅜ po) d’eau au fond (juste pour créer un effet humidifiant).
- Bien recouvrir de papier aluminium et cuire 2 heures. Servir aussitôt.

Marinated ox heart
- 1 ox heart, trimmed and cubed meat
- 3 red chillies, long, finely chopped
- 1 bulb of garlic, crushed
- ají panca, 2-3 tbsp (or you can use smoked paprika if you can't find any)
- 3 tbsp of ground cumin
- 100ml of olive oil
- salt
- black pepper
- 300ml of red wine vinegar
- flat-leaf parsley, chopped, to serve
Roasted yellow pepper sauce
- 3 yellow peppers
- 3 Scotch Bonnet chillies, yellow
- 5 spring onions
- 1 bulb of garlic
- 1 lemon, cut into quarters
- ground cumin, 1-2 tsp
- 2 tsp ají panca, (or you can use smoked paprika if you can't find any)
- salt
- black pepper
- olive oil
Instructions
- To make the anticuchos, simply stir together the marinade ingredients and coat the ox heart cubes in it. Leave it, covered, in the fridge for at least 4 hours, or overnight
- Preheat the oven to 180°C/gas mark 4
- To make the yellow pepper sauce, cut the peppers and chillies in half and place in a roasting tin with the onions, lemon wedges and whole head of garlic. Drizzle generously with oil and season with salt and pepper and roast in the oven for about 30-40 minutes, or until the peppers are soft and golden
- Leave to cool for a few minutes until you can handle them. Peel off the pepper skins and pop them in a food processor, along with the scotch bonnets (minus the seeds), the squeezed out roasted garlic and the lemon flesh (minus the pips)
- Dry fry the spices for a minute or two and add them to the food processor. Season and blitz to purée. You can add a splash of oil to slacken if needed. Taste for seasoning, adjust as necessary and serve
Adjust seasoning as necessary - Once ready to cook the anticuchos, heat a griddle or barbecue until smoking hot, or you can pop them under a very hot grill. Dry off the majority of the marinade, keeping some for basting, and thread the meat on to kebab skewers
- Cook for a couple of minutes on each side, basting with the reserved marinade and serve with a scattering of chopped flat leaf parsley and roasted yellow pepper sauce

- 2 tbsp Brown Sugar

- 0.5 tsp Onion Powder
- 0.5 tsp Garlic Powder

Prepare The Beef
- Freeze the beef for 30-60 minutes prior to slicing. The stiffness makes it much easier to cut even slices.
- Slice beef into 1/6" – 1/4" slices, ensuring all are the same thickness. We prefer to go against the grain when slicing, which results in a more tender jerky. Slicing with the grain will give the jerky a tougher texture.
- Slice away ANY excess fat.
- Place beef into a sealable baggie.
Prepare The Marinade
- Combine all ingredients in a bowl and mix thoroughly.
- Pour the marinade over the beef in the baggie.
- Massage the beef slices in the baggie, ensuring all of the slices are completely coated in the marinade.
- Allow to sit at room temperature for 45 minutes. You may also set this in the refrigerator and marinate for up to 10 hours.
Dehydrate The Beef
- Set your food dehydrator to 165°F (74°C).
- Place beef slices on dehydrator trays, first allowing any excess liquid to drip off the slices.
- Dry for 3 hours at 165°F (74°C) and blot away any fat juices from the slices.
- Dry an additional 3+ hours at 165°F (74°C) or until the beef jerky is leathery.
Store The Jerky
- Store in an airtight container with a food safe oxygen absorber for 1-2 months.
- Once opened, consume within 1 week.

- 4 gousses d’ail
- 3 tomates

- 3 oignons

- Pour commencer, vous devez nettoyer les oignons à l’eau tiède et les éplucher un par un.
- Retirez les extrémités vertes. Elles donnent un mauvais goût aux oignons.
- Si c’est fait, veuillez émincer ceux-ci finement.
- Pelez 4 à 5 gousses d’ail.
- Lavez les tomates et retirez leurs têtes.
- Passez-les au robot pour obtenir une sauce en purée.
- Mettez un filet d’huile dans une marmite à feu vif.
- Chauffer 5 minutes.
- Pendant ce temps, découpez le poulet en plusieurs morceaux.
- Si c’est le cas, faites-le dorer dans la marmite.
- Ajoutez un peu de sel et de poivre (une cuillerée chacun).
- En attendant que la volaille dorée, versez le sel et le poivre dans un pilon.
- Mettez les gousses d’ail.
- Écrasez bien le tout.
- Comme vous pouvez le voir sur la photo, les viandes de poulet sont bien dorées.
- Réservez-les dans un grand bol.
- Faites maintenant chauffer de l’huile dans une casserole à feu moyen.
- Rajoutez les oignons et le mélange préalablement broyé.
- Mettez la sauce tomate.
- Ajoutez 2 grandes cuillerées de pâte d’arachide (Dakatine).
- Mélangez bien le tout.
- Versez les morceaux de poulet et continuez à mêler.
- Ça y est, les étapes de cuisson de votre recette réunionnaise sont terminées.
- Pour la garniture, nous vous suggérons de la servir avec un peu de riz blanc et des oignons verts.

- 2 pounds skinless chicken cut into pieces
- 4 pounds ripe plantains peeled and cut into bite-size pieces
- 1 large onion peeled and diced
- 1 tbsp green seasoning paste or garlic ginger paste.
- 5 large ripe tomatoes diced
- 1 cup carrots peeled and cut into bite-size pieces
- 1 cup green beans chopped
- ¼ cup olive oil
- 1 tsp salt
- 2 seasoning cubes
- 1 tsp black pepper
- 1 tbsp parsley
- habanero pepper optional
- 1 tsp chili flakes optional
Instructions
- Heat oil in a large skillet and fry the plantains till well cooked and golden brown. Drain and set aside.
- In a large pot, heat oil over medium heat. Add onions and sauté for about 3 minutes till nicely browned.
- To that, add green seasoning paste and sauté till fragrant; about 1 minute.
- At this point, add salt, seasoning cube, pepper and sauté for 30 seconds.
- Follow by adding the tomatoes, and fry the tomatoes till well broken down and cooked.
- Add chicken and habanero pepper and stir till well coated with the tomato sauce. Reduce the heat to medium-low, cover the pot and cook the chicken for 20 minutes without adding water. The chicken will produce some of its juices, so don't worry.
- Last but not least, add carrots and green beans. Mix well and simmer on medium-low heat for 7 minutes.
- Lastly, add fried plantains; chili flakes and parsley and mix gently. Simmer once more with a covered lid for 3 minutes on low heat.

Curing the Pork Cheek
- start by rinsing your pork cheek. If you can get it with the skin still on that would be ideal. Weigh your pork cheek and input that weight into the "Servings" field of this recipe. It will automatically calculate the ingredients for you.
- combine all of the ingredients together and rub them all over your pork cheek. Place into a vac bag or a ziplock bag. Be sure to add 100% of all the spices into the bag. Remove as much air as possible.
- Place into the refrigerator for 1 week. Massage daily and flip the bag over every other day.
Drying the Pork Cheek
- Remove the cured cheek from the refrigerator and rinse clean. Wrap in a collagen sheet and truss it up. Weigh the pork cheek and record the weight.
- Place the cured pork cheek into a drying chamber set to 55F and 80% humidity for 4-6 weeks. I try to target a 30% weight loss for this charcuterie.
- After 4-6 weeks remove the guanciale from your drying chamber, remove the casing and the skin. Enjoy pan fried over just about anything you want…

- Soak the spices with hot water for 5 mins and then wrap well with a bag
To make the pork belly
- Cut pork belly into small pieces. Load wok with a large pot of water, add ginger, Sichuan peppercorn and cooking wine, cook the pork belly for 2-3 minutes after boils. Transfer out and drain.
- Add pork belly cubes in and fry until slightly seared. Transfer out and the pour the extra oil. The animal oil can be saved for noodles and soup.
- In a large pot, add pork belly, the spice bag, ginger, crystal sugar, green onions, salt, light soy sauce and dark soy sauce. Pour enough water to cover the pork belly. Bring all the content to a boiling and then slow down the fire to simmer for around 1 hour.
- Turn off the fire and then soak the pork belly within the soup. Reheat it before assembling.
To make the bread/mo/bun
- Mix yeast with water and set aside for 5 minutes. Add salt and oil to flour and then pour yeast water in. Mix and knead the dough until smooth. Cover with a wet cloth or plastic wrap to rest for around 15 minutes to 30 minutes depending on your temperature until the dough is 1/3 bigger than the previous one. (this is just a semi fermented dough).
- Knead the dough again to pinch the air out. Then roll the dough into a long log and divide 5 equal portions.
- Get on portion and then shape it into long log with two small ends (watch the video for the detailed steps). Roll it out to a long facet. Roll the facet up and suck the very ending in one end of your roll. Press it down slowly. Turnover and roll out to a bread until 1.5 cm thick. Shape it to a bowl with a hand.
- Heat up a pan. Place the bowl shaped dough in to fry until slightly brown over slow fire. Turn over to fry the second side.
- Repeat the process to finish all the buns. Preheat oven to 190 degree C.
- Transfer the bread to a baking sheet. Bake for 8 to 10 minutes so the breads are completely cooked through. This helps to create a crispy shell and soft inside texture.
To assemble the bun
- Transfer the meat out and finely minced. If you like, you can add chopped coriander and cumin powder.
- Cut 2/3 of the bun from the middle. Lay minced pork and other ingredients within the bun.
- Serve warm!
Ingrédients
- 2 langues de porc
- eau chaude pour couvrir
- 3 grains de poivre
- 6 clous de girofle
- 2 c thé sel
- 2 feuilles de laurier
- ½ tasse de vinaigre
- ¼ tasse de sucre
Instructions
- Recouvrir d'eau chaude les langues.
- Faire mijoter pendant 1 heure.
- Ajouter le poivre,les clous, le sel, le vinaigre et le sucre.
- Couvrir et faire mijoter jusqu'à ce que les langues soient tendres (pique au couteau pour voir).
- Laisser refroidir dans le bouillon.
- Enlever la peau et le cornet.
- Laisser entières ou couper en dés.Placer dans des pots stérilisés.
- Dégraisser le bouillon.
- Couler et reporter a ébulition.
- Verser bouillant sur les langues.
- Fermer les pots et garder au frigo.
