Ingrédients
Crème au chocolat
- 480 g lait demi écrémé
- 120 g crème liquide entière 30%mg
- 15 g sucre cassonade
- 30 g maïzena
- 90 g chocolat noir pâtissier à 65-70% cacao
- 70 g chocolat au lait pâtissier
Chantilly mascarpone
- 200 g crème liquide entière 30%mg très froide
- 100 g mascarpone très froid
- 25 g sucre glace
- 0,5 cc extrait naturel de vanille
Préparation
Crème au chocolat
- Dans un bol, verser la maïzena. Délayer en ajoutant 150g de lait petit à petit en fouettant bien pour ne plus avoir de grumeaux.
- Dans une casserole, verser le reste de lait (330g), la crème liquide et le sucre cassonade. Commencer à chauffer à feu doux.
- Ajouter rapidement la maïzena délayée. Continuer de fouetter tout en chauffant le mélange.
- Avant ébullition (ne pas chauffer trop fort), ajouter le chocolat noir et le chocolat au lait en morceaux pour qu'il fonde. Ne pas cesser de fouetter jusqu'à ce que le crème se forme, environ 4-5 minutes à feu doux.
- Verser le mélange dans un verre doseur puis dans 4 verres à dessert en les remplissant aux 3/4 pas plus (vous pourrez peut-être faire plus de verres selon leur taille).
- Laisser tiédir puis placer au réfrigérateur 2 heures.
Chantilly mascarpone
- Dans un large récipient ou bol du robot, verser la crème liquide très froide, le mascarpone, le sucre glace et la vanille. Commencer à fouetter vitesse moyenne jusqu'à ce que la chantilly se forme. Une fois que la chantilly se forme, bien lisse, elle est prête. Ne pas insister au risque qu'elle graine.
- Verser la chantilly dans une poche à douille munie d'un gros embout cannelé (voir matériel ci-dessus). Placer la poche à douille au dessus de la crème au chocolat froide. Dessiner un cercle de l'extérieur vers l'intérieur du verre, en faisant plusieurs tours pour créer un joli dôme de chantilly.
- Râper quelques copeaux de chocolat gratter la tranche d'une tablette de chocolat à l'aide d'un économe. Déposer les copeaux sur la chantilly.
- Garder les verres au réfrigérateur jusqu'à dégustation.
Ingrédients
- 300g de chocolat de bonne qualité
- 20 cl de crème à fouetter à 35%
- environ 50g de beurre de qualité
- cacao amer en poudre
Instructions
- Faire fondre le tout à petit feu, ou au mieux au bain-marie
- Laisser refroidir
- Faire des boulettes et les rouler dans le cacao
Ingrédients
- 190g de chocolat noir
- 150g de crème liquide
- 30g de beurre en pommade
- 25g de miel
- 5cl d'alcool (poire , mirabelle, chartreuse ...)
- nougatine
Instructions
- Tailler la nougatine en petits morceaux.
- Hacher le chocolat à l'aide d'un grand couteau.
- Le réserver dans un bol.
- Porter à ébullition la crème et le miel.
- Verser un tiers du liquide bouillant sur le chocolat, bien mélanger à la spatule ou au fouet, puis ajouter le reste en deux fois.
- Incorporer ensuite le beurre mou, lisser et l'alcool.
- Placer la préparation dans une poche à douille.
- Laisser refroidir.
- Faire ensuite des boules en versant directement un peu de ganache dans le pralin ou le chocolat en poudre.
- Ajouter quelques petits morceaux de nougatine.
- Former une boule bien ronde à la main.
- Réserver au frais dans une boite métallique.
Ingrédients
- 400g de lait concentré sucré (1 boîte)
- 250g de noix de coco râpée (2 sachets)
- 200g de chocolat (j'ai utilisé du chocolat au lait à pâtisser, Nestlé, impeccable)
- 30g de beurre
Instructions
- Verser la noix de coco et le lait concentré sucré dans un saladier. Bien mélanger.
- Répartir dans des petits moules rectangulaires en silicone (ou bien faire des boudins ou des bâtonnets à la main) sur une épaisseur d'environ 1,5cm.
- Mettre au réfrigérateur pendant 12 heures (pour que la pulpe de coco s'imprègne bien du lait concentré).
- Mettre au congélateur pendant 12 heures (pour faciliter le démoulage).
- Faire fondre le chocolat et le beurre au bain-marie (ou, comme moi, au micro-ondes), mélanger jusqu'à ce que le tout soit bien lisse. Si ce chocolat est trop épais, incorporer une cuillère à soupe de lait.
- Démouler les barres de coco.
- Plonger les bâtons de coco un par un dans le chocolat, bien les enrober, sortir à l'aide d'une fourchette, et laisser figer sur du papier sulfurisé (ou alu, à défaut).
- Réfrigérez vos Bounty si vous êtes vraiment très pressé(e) de les dévorer.
Ingrédients
Génoise au chocolat
- 200 g de sucre
- 6 œufs
- 180 g de farine
- 60 g de cacao en poudre non sucré
- 1 cuillère à café de levure chimique
- 1 pincée de sel
Garniture et montage
- 800 g de cerises dénoyautées en conserve (égouttées et réservant le jus)
- 500 ml de crème fouettée
- 100 g de sucre glace
- 1 cuillère à café d'extrait de vanille
- 100 g de copeaux de chocolat pour la décoration
- Cerises entières pour la décoration (facultatif)
Instructions
- Préchauffez le four à 180°C (350°F). Beurrez et farinez un moule à gâteau de 26 cm de diamètre.
- Dans un grand bol, battez les œufs et le sucre jusqu'à ce que le mélange soit léger et mousseux. Tamisez la farine, le cacao, la levure et le sel, puis incorporez-les délicatement au mélange d'œufs et de sucre.
- Versez la pâte dans le moule préparé et faites cuire au four pendant 30 minutes, ou jusqu'à ce qu'un cure-dent inséré au centre du gâteau en ressorte propre. Laissez le gâteau refroidir complètement avant de le démouler et de le couper en trois couches horizontales égales.
- Pendant que le gâteau refroidit, préparez la crème fouettée en battant la crème, le sucre glace et l'extrait de vanille jusqu'à ce qu'elle forme des pics fermes.
- Imbibez légèrement les couches de gâteau avec le jus de cerise réservé
- Placez la première couche de gâteau sur un plat de service, garnissez-la de crème fouettée et répartissez la moitié des cerises égouttées par-dessus. Répétez avec la deuxième couche de gâteau, la crème fouettée et les cerises restantes. Placez la dernière couche de gâteau sur le dessus et recouvrez le gâteau entier de crème fouettée sur les côtés et le dessus.
- Décorez le gâteau avec les copeaux de chocolat sur les côtés et le dessus du gâteau. Si vous le souhaitez, ajoutez quelques cerises entières pour garnir le dessus. Réfrigérez le gâteau pendant au moins 2 heures avant de le servir pour permettre aux saveurs de se mélanger.

- ½ cup (1 stick) unsalted butter, cut into 8 equal pieces
- 1 cup (125 g) all-purpose flour
- ½ cup (63 g) buckwheat flour
- ½ tsp. baking powder
- ½ tsp. baking soda
- 1¼ tsp. Diamond Crystal or ¾ tsp. Morton kosher salt, plus more
- 6oz. bittersweet chocolate (65–75% cacao) bars or wafers (disks, pistoles, fèves)
- ⅔ cup (133 g; packed) light brown sugar
- ½ cup (100 g) granulated sugar
- 1 large egg
- 2 large egg yolks
- 1 tsp. vanilla extract
Instructions
- Heat ½ cup (1 stick) butter in a small saucepan over the lowest heat possible until melted (you don’t want it to sputter or brown), about 5 minutes.
- Meanwhile, whisk 1 cup (125 grams) all-purpose flour, ½ cup (63 grams) buckwheat flour, ½ tsp. baking powder, ½ tsp. baking soda, and 1¼ tsp. Diamond Crystal or ¾ tsp. Morton kosher salt in a medium bowl.
- Coarsely chop 6 oz. bittersweet chocolate. Set aside a handful of chocolate in a small bowl.
- Scrape butter into a large bowl and add ⅔ cup (133 grams) light brown sugar and ½ cup (100 grams) granulated sugar. Whisk vigorously until butter has been absorbed into the sugar and no big lumps remain, about 30 seconds.
- Add 1 large egg, then 2 large egg yolks, one at a time, whisking until fully combined after each addition. Whisk in 1 tsp. vanilla extract. At this point, your mixture should look much lighter in color and be smooth, almost creamy.
- Add dry ingredients and use a rubber spatula or wooden spoon to stir until just incorporated and almost no dry streaks remain. Add chopped chocolate (but not the chocolate you reserved in the small bowl) to batter. Gently mix just to distribute. Cover bowl with an airtight bowl cover, a kitchen towel, or plastic wrap and chill 2 hours. (If you’re crunched for time, 1 hour will do, but cookies will be best after 2.)
- Place racks in upper and lower thirds of oven; preheat to 375°. Using a tablespoon measuring spoon, scoop out scant 2-Tbsp. portions of dough (or, if you have a scoop, this is a leveled-off #30 or a heaping #40)) until you have 10 portions divided between 2 parchment-lined baking sheets (you want five per sheet—these will spread a bit!). Roll portions into balls and gently press a piece or 2 of reserved chocolate into each one. It’s okay to cram the chocolate on there—some pieces can even be vertical. Cover and chill any remaining dough.
- Bake cookies, rotating baking sheets top to bottom and front to back halfway through, until edges are golden brown and centers are puffed, 8–10 minutes. (Pull at 8 if you like your cookies softer and want to guarantee they’re still soft the next day!)
- Working one at a time, pull baking sheets out of the oven and tap lightly on the stove to deflate cookies. Sprinkle with Diamond Crystal kosher salt (if you’re using Morton, skip it: the crystals are too large). Let cookies cool on baking sheets 5 minutes, then transfer to a wire rack and let cool completely. Let baking sheets cool (to do this fast, run them under cold water), then turn parchment paper over. Repeat process with remaining dough, dividing evenly between baking sheets, to make 6–8 more cookies.

- 300 g de farine de blé
- 50 g de farine de riz
- 1 sachet de levure boulangère sèche
- 20 cl de lait
- 70 g de sucre
- 3 cuillères à soupe d’huile neutre (pépins de raisin par exemple)
- de la pâte à tartiner chocolat noisette (ici gianduja)
Instructions
- Faites tiédir le lait avec le sucre jusqu’à dissolution.
- Quand le lait est tiède/chaud (non bouillant – 30/35°C – trempez votre petit doigt dedans, vous ne devez pas trop ressentir la chaleur), ajoutez-y l’huile (neutre en saveur et en couleur, pas comme ce que j’ai fait donc) et la levure de boulanger.
- Mélangez.
- Dans un grand saladier, mélangez les deux farines puis versez-y le lait tiède tout doucement en mélangeant délicatement avec les doigts.
- Travaillez la pâte jusqu’à obtenir une boule, enrobez-la de farine (pour éviter qu’elle ne colle au plat et favoriser son extraction plus tard) et laissez-la monter deux heures dans son saladier, recouvert d’un linge propre, dans un endroit chaud et à l’abri des courants d’air (enfermée dans votre four éteint par exemple)
- Une fois que la pâte à brioche a bien levée, étalez-la sur un plan de travail, préalablement fariné, à l’aide d’un rouleau à pâtisserie. Ni trop épaisse, ni trop fine.
- Munissez-vous d’un emporte pièce rond de 8 cm de diamètre (environ… ou un verre, ou un petit bol) et découpez des cercles jusqu’à épuisement de la pâte.
- Déposez une petite boule de gianduja au centre de l’un des rond de pâte, et repliez-la autour de la boule vers le haut petit à petit jusqu’à avoir fait le tour.
- Faites une sorte de « tourbillon » au moment de fermer la brioche pour solidifier la « soudure » (humidifiez un peu la pâte au besoin).
- Posez votre banh bao sur un carré de papier cuisson et procédez à la réalisation des autres jusqu’à épuisement de la pâte.
- Enfin, posez-les dans votre panier de cuiseur-vapeur, sans trop les coller et laissez-les cuire 10 à 15 minutes. Une fois cuit vos banh bao ont un peu gonflé et sont bien blancs.
- Servez rapidement après cuisson.

- 2 1/4 cups (313 g) all-purpose flour
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1 tsp cornstarch
- 3/4 cup (150g) dark brown sugar
- 1/4 cup (50g) granulated sugar
- 2 cold eggs
- 2 teaspoons vanilla extract
- 1 cup (225g) unsalted butter, slightly softened
- Pinch of salt
- 1 1/2 cups (250g) semi-sweet chocolate chips
- 1 cup (200g) dark chocolate chips
Instructions
- Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
- Whisk together flour, baking powder, baking soda, and cornstarch in a medium bowl. Set aside.
- Cream together brown sugar, granulated sugar, and butter in a large bowl until light and fluffy.
- Beat in eggs one at a time, followed by vanilla extract, for 3-4 minutes until the batter turns pale and the sugar is well incorporated.
- Gradually mix in dry ingredients until just combined, being careful not to overmix.
- Stir in chocolate chips.
- Scoop 2 tablespoon-sized balls of dough onto the prepared baking sheet. Leave the dough balls slightly rough and stacked, with a rustic texture. Place 4 cookies on each pan, leaving 4 inches of space between each one. Top with extra chocolate chips.
- Bake for 13-16 minutes on middle rack or until edges are lightly golden brown.
- Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

- 135 g salted butter, (US = just over ½ cup, or just over 1 stick)
- 55 g cocoa powder, (plus 1 tablespoon) unsweetened, plus extra for sprinkling
- 350 g sugar
- 110 g plain flour, (actually, just less than a full cup, about 0.85 cups)
- 1 teaspoon vanilla extract
- 3 eggs, lightly whisked

- Pre-heat the oven to 180C/355F. Line the bottom of a 7-9 inch (see note below) springform cake pan with a circle of baking paper, then grease the paper and the sides of the pan.
- Melt the butter in a medium saucepan, then take off the heat and set aside.
- Add the cocoa, sugar, flour and vanilla to the butter and stir a little. Then add the eggs and stir everything together until well combined.
- Pour the mixture into the cake pan and bake for 20 to 25 minutes (see note below) until the top is set but the centre is still gooey (the top should be firm but crack under a little pressure from your finger).
- Let the cake cool in the pan, then run a knife between the pan and the cake to loosen it. Turn out onto a plate or cake stand (see note below). Dust generously with cocoa powder and serve warm with ice cream or cream.
Note 1 pour la version sans gluten, il suffit de remplacer la farine par de la poudre d'amandes.
Note 2 ne pas doubler la recette même si la quantité de beurre à l'air petite.
C'est très facile à faire et c'est excellent. À refaire !

- 240ml guinness
- 140g salted butter
- 70g cocoa powder + 2 Tbsp Black Cocoa Powder
- 300g Dark Brown Sugar
- 50g Golden Caster Sugar
- 180ml sour cream OR crème fraiche
- 2 large eggs
- 4g Flaked Salt
- 2 Tbsps vanilla extract
- 250g plain flour
- 2½ tsp baking powder
- 100g Dark or Milk Chocolate Chips
For the topping
- 3 tbsp baileys
- 140g icing sugar
- 300g Mascapone at room temperature
- 200ml double cream
- 1 Tbsp Vanilla Extract or bean paste
- Pinch of flaked salt
Instructions
- Preheat oven to 160°C Fan. Grease a 23cm tin with melted butter and set aside. I like to dust mine with a little cocoa powder too.
- In a large saucepan, combine the Guinness and butter. Place over medium-low heat until the butter melts, then remove from heat. Add the cocoa powder and caster sugar, and whisk until well blended. Combine all the ingredients together and bake for 55 minutes/ 1 hour, or until risen and firm. A skewer inserted into the centre should come out clean.
- Let the cake cool completely in the pan on a wire rack.
- Add all the topping ingredients together into the bowl of your stand mixer and using the beater attachment, beat together until thick and creamy.
- Once the cake is fully cooled, remove it from the pan and place it on a serving plate or cake stand. Spread the frosting over the top of the cake only, so it resembles the creamy head of a pint of Guinness.

- 50g de poudre d’amande
- 85g de sucre glace
- 25g de farine
- 75g de blanc d’oeuf
- 70g de pépites de chocolat

- 60g de crème

Biscuit
- Faire fondre 75g de beurre dans une casserole, jusqu’à l’obtention d’un beurre noisette.
- Mélanger, avec une maryse, 75g de blanc d’oeuf, 85g de sucre glace, 25g de farine et 50g de poudre amande.
- Ajouter le beurre fondu, mélanger délicatement, puis ajouter 70g de pépites de chocolat, mélanger.
- Déposer la pâte dans des moules à savarins.
- Enfourner 25min à 180°.
Crème au chocolat
- Faire chauffer 60g de crème quelques minutes dans une casserole.
- Puis y faire fondre 60g de chocolat. Lorsque le chocolat est fondu, intégrer 10 g de beurre et fouetter le mélange.
Montage
- Démouler les gâteaux lorsqu’ils sont cuits.
- Déposer une cuillère de crème au chocolat dans le creux formé par le moule.

Coffee Bundt Cake
- 3 cups all-purpose flour (375 grams)
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter (112 grams) softened
- ½ cup vegetable oil (120 ml) or canola
- 2 cup light brown sugar* (400 grams) packed
- 4 large eggs room temperature
- 1 cup sour cream (240 ml) room temperature
- 3 tablespoons instant coffee powder feel free to use 2 tablespoons for a less intense flavor
- 2 tablespoons hot water (30 ml)
Chocolate Ganache
- 4 ounces dark chocolate (112 grams) around 50%, or feel free to use semi-sweet`
- ½ cup heavy cream (120 ml)

Coffee Bundt Cake
- Preheat the oven to 350F (180C or 160C fan forced).
- Whisk together the flour, baking powder, baking soda and salt.
- In a very large mixing bowl, beat together the butter, brown sugar and oil until creamy (seeing sugar granules is fine).
- Beat in the vanilla extract and eggs 1 at a time. Stop mixing when you no longer see pieces of egg in the batter.
- Turn off the mixer and scrape down the sides and bottom of the bowl. Add in about 1/2 of the flour mixture and beat on a low speed until just combined.
- Add the coffee grounds to the hot water int a small cup or bowl and stir. Add the coffee and sour cream to the cake batter and mix with the beater on a low speed until combined.
- Turn off the mixer and add in the rest of the flour mixture. With a hand held whisk, whisk until smooth.
- Brush a non-stick bundt pan with pan release/cake goop or grease and lightly dust with flour.
- Pour the batter into the prepared pan.
- Bake in the preheated oven for 45-55 minutes, or until an inserted toothpick comes out clean.
- Let the cake cool in the pan for about 15 minutes, then carefully invert the pan and slide the cake out.
Chocolate Ganache
- Chop the chocolate into very fine pieces and place in a heatproof bowl.
- Heat the cream until almost boiling.
- Pour the hot cream over the chopped chocolate. Let sit for 3-5 minutes, then whisk until smooth.
- If there are still some lumps of chocolate, microwave for 30-second intervals at medium heat (not high heat, which is often the default) and whisk between each interval until smooth.
Assembly
- If the bottom of the cake is very domed (what was the top while the cake was baking), gently saw off the rounded top using a serrated knife.
- Place the cake on a plate or cake stand that you plan to serve it on.
- Pour/drizzle the chocolate ganache over top, letting it drip over the sides.

- 1 ¼ cups sifted all-purpose flour
- 1 teaspoon salt
- 2 sticks (8 ounces) unsalted butter
- 4 ounces unsweetened chocolate, coarsely chopped
- 2 ounces bittersweet chocolate, coarsely chopped
- 2 cups sugar
- 1 teaspoon pure vanilla extract
- 4 large eggs
Instructions
- Center a rack in the oven and preheat the oven to 350 degrees.
- Sift the flour and salt together and set aside.
- Melt the butter and chocolate together in a medium saucepan over low heat, stirring frequently and keeping a watchful eye on the pot to make certain the chocolate does not scorch. Add 1 cup of the sugar to the mixture and stir for half a minute, then remove the pan from the heat and stir in the vanilla. Pour the mixture into a large bowl.
- Put the remaining 1 cup sugar and the eggs into the bowl of a mixer and whisk by hand just to combine. LIttle by little, pour half the sugar and eggs into the chocolate mixture, stirring gently but constantly with a rubber spatula so that the eggs don't set from the heat. Fit the whisk attachment to the mixer and whip the remaining sugar and eggs until they are pale, thick, and doubled in volume, about 3 minutes. Using the rubber spatula, delicately fold the whipped eggs into the chocolate mixture. When the eggs are almost completely incorporated, gently fold in the dry ingredients.
- Pour and scrape the batter into an unbuttered 9-inch square glass or ceramic pan. Bake the brownies for 25-28 minutes, during which time they will rise a little and the top will turn dark and dry. Cut into the center at about the 23-minutews mark to see how they are progressing. They will be perfect if they are just barely set and still gooey. Cool the brownies in the pan on a rack. Cut into bars and serve.
- The brownies will keep, covered, for 2-3 days at room temperature and can be frozen for up to a month!
C'est très bon. Les gouteurs ont été unanimes.

- 750g full-fat cream cheese (at room temperature)
- 240g caster sugar
- 20g chocolate powder
- 150g dark (70%) chocolate
- 3 whole eggs (at room temperature)
- 300ml double cream (at room temperature)
- 1/4 teaspoon fine sea salt
- 2 tsp whisky (optional)
Instructions
- Preheat the oven to 230°C (450°F).
- In a bowl, beat the cream cheese and caster sugar using an electric hand mixer until smooth.
- Add the eggs one at a time, mixing well after each addition until fully combined.
- Gradually pour the melted chocolate into the double cream while mixing. Stir in the whisky at
this stage. - Pour the chocolate-whisky cream mixture into the bowl with the cream cheese mixture and
blend everything together. - Add the salt and cocoa powder, then mix until smooth.
- Line a 20cm springform pan with parchment paper. Pour the batter into the pan and gently tap
it on the countertop a few times to release any air bubbles. - Bake the cheesecake uncovered for 35 minutes, or until the top is slightly charred. Avoid
opening the oven door during baking. - Once the cheesecake has cooled for 3 to 4 hours, serve or transfer it to the fridge.
J'ai testé mais je ne referai pas. C'est plus écœurant que l'original et on ne goûte pas le whisky.
Ingrédients
- 8 tasses de petits bleuets sauvages du Lac Saint-Jean (ou 1160 g de myrtilles) (oui ils peuvent être préalablement congelés)
- 1 tasse (236 ml) d'eau
- 7 tasses (1342 g) de sucre (pas moins)
- 2 tasses (360 g) de pépites de bon chocolat noir non sucré (70 % de cacao)
- 2 c. à s. de jus de citron en bouteille ou de jus de citron vert frais
- 2 sachets de pectine liquide commerciale ou mieux, 2/3 de tasse (170 ml) de pectine faite maison
- 1/4 de tasse (4 c. à s.) (60 ml) de brandy

- Bien laver et bien égoutter les bleuets. Retirer les petits mollassons (sauf si ils ont étés congelés, bien entendu).
- Écraser les bleuets une couche à la fois dans une casserole en inox à fond épais. (la casserole doit faire au moins 8 litres, car ça écume violamment)
- Ajouter la tasse d'eau et porter à ébullition, baisser le feu et laisser mijoter à découvert environ 10 minutes en brassant de temps à autre.
- Ajouter le sucre et bien brasser pour tout le dissoudre.
- Ajouter le chocolat et le jus de citron, bien brasser pour tout le dissoudre.
- Cuire jusqu'à 105°C en remuant.
- Ajouter la pectine et reporter à forte ébullition pour exactement 1 minute en remuant bien.
- Retirer du feu.
- Ajouter le brandy et bien brasser pour le mélanger uniformément.
- Empoter en laissant 1/4 de pouce (6 mm) sous le goulot.
- Placer les pots scellés dans l'eau bouillante pour 10 minutes.
Note Ceci donnerait un gout de chocolat prédominant, pour une saveur moitié/moitié n'utilisez 250 g de chocolat et ajoutez 110 g de sucre. Pour remplacer les 2 tasses (360 g) de pépites de bon chocolat noir. Ça ne devrait pas influencer trop la texture.

- 2 cups sugar

Cette recette maison n’utilise pas de grué ou de beurre de cacao, mais directement du chocolat. Nous vous proposons d’utiliser du chocolat au lait Jivara 40 %, mais vous pouvez aussi opter pour un chocolat noir pour un gianduja plus cacaoté.
Vous aurez donc besoin des ingrédients suivants :
- des noisettes entières ou mondées, éventuellement mélangées à d’autres fruits à coque
- du sucre en poudre
- du chocolat au lait ou noir
Prévoyez si vous le souhaitez de l’extrait naturel de vanille ou une pointe de sel.
Pour votre premier essai, nous vous conseillons d’utiliser la même quantité de fruits secs, de sucre et de chocolat. Vous pourrez par la suite jouer sur les proportions pour obtenir un gianduja adapté à votre goût et à l’utilisation que vous souhaitez en faire.
Torréfaction
La préparation du gianduja maison commence par la torréfaction des noisettes. Nous retrouvons ici les mêmes étapes que pour le praliné :
Mettez votre four à préchauffer à 140 ou 150 °C (thermostat 5).
Sortez la plaque du four et recouvrez-la d’une feuille de papier sulfurisé sur laquelle vous disposerez vos fruits à coque.
Enfournez vos fruits secs pendant 10 à 20 minutes pour les torréfier.
Remuez-les de temps en temps pour une torréfaction homogène.
Sortez vos fruits à coque du four et placez-les sur une surface froide.
Broyage
Si vous utilisez des noisettes mondées, vous pouvez passer au broyage. Dans le cas contraire, vous allez devoir retirer la peau des noisettes. Pour cela, nous vous conseillons de les placer dans un torchon pour les frotter les unes contre les autres. Cela vous évitera de vous brûler les mains.
Placez à présent les noisettes torréfiées encore chaudes et le sucre glace dans votre mixeur. Vous allez devoir mixer jusqu’à l’obtention d’une pâte bien lisse, ce qui peut prendre 10 à 15 minutes. Pensez à faire des pauses si votre robot commence à chauffer.
Cuisson
Parallèlement au broyage, vous devrez faire fondre le chocolat auquel vous intégrerez ensuite le reste des ingrédients.
Commencez par faire fondre le chocolat que vous avez choisi au bain-marie.
Une fois le mélange de noisettes et de sucre suffisamment mixé, versez-le dans le chocolat fondu.
Remuez le tout en vous assurant d’obtenir une texture lisse et homogène.
Passez éventuellement l’ensemble au mixeur si nécessaire.
Refroidissement
Pour faire refroidir le mélange de noisettes, sucre et chocolat, versez-le dans un plat ou dans des moules en silicone. Placez-le ensuite au réfrigérateur pour bien lui laisser le temps de refroidir. Laissez refroidir votre gianduja pendant au moins quatre heures.
Vous pourrez ensuite démouler votre gianduja ou le découper en petits cubes si vous avez utilisé un grand plat. Comme pour les pralinés, conservez-le à l’abri de la lumière et de la chaleur, de préférence dans un récipient hermétique que vous pourrez conserver au réfrigérateur.

- 60g de chocolat noir, haché
- 3 cuillères à soupe de beure
- ¼ de tasse de sucre
- 1 œuf
- 3 cuillères à soupe de farine tout usage
Instructions
- Préchauffez le four à 160°C (325°F). Placez la grille au centre du four.
- Hachez grossièrement le chocolat et réservez 30 ml (2 c. à soupe).
- Dans un bol moyen allant au four à micro-ondes, faites fondre le chocolat et le beurre 1 minute, en remuant après 30 secondes.
- Ajoutez le sucre et mélangez à l’aide d’un fouet. Incorporez l’œuf en fouettant.
- Ajoutez la farine et fouettez légèrement.
- Répartissez la préparation dans deux ramequins. Ajoutez 15 ml (1 c. à soupe) de chocolat haché au centre de chaque portion et enfoncez légèrement dans la pâte.
- Déposez sur une plaque de cuisson et faites cuire 15 minutes ou jusqu’à ce que les rebords du gâteau soient fermes et le centre encore coulant. Laissez tiédir quelques minutes avant de servir.

- ¼ cup unsweetened cocoa powder
- ½ teaspoon salt
- 3 ½ ounces semisweet chocolate, coarsely chopped
- ½ cup (1 stick) unsalted butter
- ½ cup stout or other dark beer, or cold coffee
- 4 large eggs, at room temperature
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 2 teaspoons pure vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions
- Place a rack in the center of the oven and preheat oven to 350 degrees F. Butter and flour a 9 x 13-inch baking pan. Set aside.
- In a medium bowl, sift together flour, cocoa powder, and salt.
- Melt the chocolate in a heatproof bowl over a pot of boiling water. In a small pan over medium heat, melt the butter until it just turns golden brown, about 5 minutes. Pour the brown butter into the chocolate and stir until combined. Remove the bowl from the heat and stir in the stout (or coffee).
- In a separate medium bowl, whisk together eggs, vanilla and sugars until thick, about 2 minutes. Add the chocolate mixture and whisk to combine. Add the wet ingredients to the dry ingredients and stir until all of the ingredients are well combined. Fold in the chocolate chips.
- Pour into the prepared pan and bake for 35 to 40 minutes or until the edges are firm and the center is set. Remove from the oven and allow to cool completely in the pan before slicing.
- Slice into 12 large or 24 small brownies.
- To store, cover the pan in plastic wrap and keep on the counter for up to one week.
Cette recette est énorme. J'en ai donné aux voisins tellement ça en fait.
Je ne suis pas un grand fan du résultat. Je vais conserver celle que j'utilise déjà depuis des années qui donne (à mon goût) un meilleur résultat.
